A certain someone in the house had her birthday on Monday. Since it’s Covid Times, we just celebrated with our little family of four. And since we were keeping everything low-key, we celebrated the Sunday before with some presents, some Minecrafting (even remotely with her cousin!), waffles, quesadillas and cookies at C’s request. But when her actual birthday arrived, I just couldn’t shake the feeling it wasn’t quite enough, so I decided to make a small cake and some maki rolls to enjoy after everyone was done with school and work. Her little brother even helped with cake-baking, whipped cream-whipping, and meringue-squirting. Okay, C joined in with the meringue fun, too. The results were a super-fun and airy Tie-Dye rainbow cake with Whipped Cream Frosting, and what we dubbed Unicorn Poop.
